This sweet, salty & tangy salad makes for a refreshing addition to the festive summer table. Full of flavour and super simple to make, it'll become a holiday fave. Recipe by Amber Phillips.
Serves 4-6 as a side.
INGREDIENTS
Salad:
750gm watermelon cubed
2 Lebanese cucumbers
150gm Greek feta, crumbled
2 tsp Tajin seasoning
Zest of one lime
Handful of fresh mint
Dressing:
Juice of 1 lime
Drizzle of olive oil
Cracked pepper & salt
METHOD
1. Add the cubed watermelon and chopped cucumber to your serving plate or salad bowl. We served ours on our Sicilia Festa Plates.
2. Add crumbled feta.
3. Sprinkle over tajin spice & lime zest.
4. Squeeze lime juice and drizzle with olive oil.
5. Season with salt & pepper.
6. Top with fresh mint.
